Lately my CSA has been giving me an awful lot of cabbage. I don’t eat tons of cabbage usually. I like it. It’s just not a normal part of my diet. So, I had to get creative. Now, when I think cabbage, the first food that comes to mind is coleslaw. BUT I absolutely abhor mayonnaise.

I am super happy with this granola recipe. To be fair, I did use this recipe as a starting point. However, per usual I didn’t have all the ingredients and I don’t like going to the store to get more stuff just to make a new recipe. I like to use what I have.

These are surprisingly tasty. I know pulp muffins just sound amazing and make your mouth water (insert sarcasm here). But I was pleasantly surprised by the result of this experiment. I even had test subjects who enjoyed them.

Quinoa has quickly become one of my favorite grains. It’s delicious and full of protein. In fact, it has a complete amino acid profile. Just add some vegetables and I am salivating.
