I had some friends over last weekend. My husband is out of town, so we had a girl’s night. I made tacos and friends brought salad, salsa, humus, chips, and wine (LOTS OF WINE).

The holiday season always means excessive amounts of baking delicious goodies. This year I made traditional chocolate chip cookies, oatmeal chocolate chip cookies, and triple chocolate chip cookies. The last two are my favorites. And this year we baked them to share at work as well as with the family. These are not traditional Christmas cookies, which means you have the excuse to bake them anytime!

I would give my left arm for a tomato right now. I’m right handed, so I think I’ll keep the right arm. And I don’t mean any tomato. I mean a fresh, local, summer, heirloom tomatoes. The kind of tomato you can eat like an apple after picking it fresh from the garden.

A friend of mine invited me to dinner a few weeks ago. I didn’t want to come empty handed but I didn’t have a lot of time to devote to baking. I am a huge fan of apple pie. However, it’s involved and has a significant amount of butter in it. So, I thought I’d try a quick and vegan alternative.
