I have taken to making dal at the beginning of the week for a quick and easy lunch option (around 4 lunches so probably about 4 servings). I really love this dish because it’s versatile.

Once aware what the organic label means and what the major sources of agricultural pollution are, my next question was: when I purchase organic lettuce from the supermarket instead of conventional lettuce, am I making a difference?

Just how harmful are our conventional farming methods? Conventional farming uses large inputs of pesticides to control insects, weeds, and fungi; fertilizers to ensure large crop yields; and energy to run machinery, produce pesticides and fertilizers, and transport, store, process, and pack end products. We used potatoes, onions, tomatoes, spinach, sprouts, and cilantro.

One of my favorite quotes is from Hippocrates, the ancient Greek physician: “Let food be thy medicine and medicine be thy food.” This quote resonates with me because I firmly believe our diet intimately affects our health.

Eat the Leaves

Eat the Leaves is about combining my love for food and literature. After long lists of word combinations, ridiculous alliterations, and outrageous word play, the saying “read between the lines” lead me to “eat between the leaves.” I enjoyed the double and hidden meanings: things left unsaid, implications, secret ingredients, edible leaves (spinach, kale, lettuce), and the leaves of a book ready to be devoured.
